El Injerto´s Reserva del Comendador® is the new online coffee auction that features the most distinctive and unique micro-lots of the best varietals of El Injerto S.A, a Guatemalan company managed by the Aguirre family. Reserva del Comendador® will auction on June 19, 2012 exemplary varieties. featuring Mocca, Ethiopian Geisha, Central America Geisha, Pacamaras, Maragogypes and Bourbon Peaberry micro-lots from El Injerto and Macadamias farms, both located in La Libertad, in Huehuetenango region.

Founded in 1874 by Jesús Aguirre Panamá, El Injerto has produced various bourbon coffee lots awarded with the prestigious Cup of Excellence, since 2002. Lately, it has also tendered Pacamara coffee lots awarded first place for three consecutive years in the international competition of that event. We made this special reserve available to everyone on June 14th. 2011. A total of sixty six buyers registered to acquire the most exemplary coffee lots with unique flavor profiles.  Mocca, Geisha Central America and Geisha Ethiopia were the top highest prices followed by Pacamara, Bourbon Peaberry and Maragogype.

Exquisite rareness

El Injerto´s coffee varieties have been described by discerning palates as unique and exotic, because its characteristics are rarely found in others. Connoisseurs coincide to identify in Pacamaras floral, citrus and tropical fruit notes, most commonly apricot, harmoniously balanced with a round and buttery mouth feel; cocoa and spicy hints enhance a lingering and flavorful aftertaste, providing a rich and pleasant sensorial experience. Mocca´s main flavor descriptor is tangerine, Geisha´s are recognized as lemon grass flavors and Bourbon has a distinctive jasmin taste and a delicate acidity.

You may want to know the secret of its exquisite rareness: altitude, ideal microclimate and the right varieties of coffee. A total 92 bags of green beans were selected to offer in the first edition of Reserva del Comendador®. Our human contribution to the perfect combination of 1,600 MASL ideal altitude, 20° C average temperature and sunlight that provides proper time for coffee cherries to ripen under the shade of Inga and Gravilea trees are: strict controls in the field, wet and dry mill, perfectly detailed maps of each parcel, identified, appropriate varietals planted, passion and dedication.

Coffee micro-lots of Reserva del Comendador® are carefully picked by the most experience workers in the farm, who receive a premium for picking only the ripen cherries. Wet milled separately, each lot is set in a fermentation tank for 36 to 48 hours. Then, sun dried in patios for about 7 days or aprox. 70 hours of sun. Each bag is labeled, stocktaking and stored in the warehouse of the farm. After resting for a minimum of 45 days, samples are taken to be tasted and evaluated by professional cuppers. Our company is focused on quality, as a key ingredient to achieve sustainability. Part of this agricultural concept includes rewarding our employees.
